Hi, there! Do you like cheese, cauliflower, bacon, and other yummy ingredients? Well, autumn is on its way to the northern hemisphere, and this recipe is sure to make your belly very happy. Your taste buds will appreciate it, as well!

We found this recipe by Googling it. You can get the original recipe from Small Town Woman. We made a few tweaks based on what we had on hand and what we like.

Preheat your oven to 425 degrees Fahrenheit. Lightly grease an 8" x 8" glass baking dish, a standard bread pan, or a 2 quart enamel baking dish. Preheat the pan in your oven for about 5 minutes. Don't go over that, because you don't want to scorch anything.


Ingredients:

  • 2 pounds cauliflower florets, broken into bite-sized pieces

  • 1/2 brick (4 oz.) of softened cream cheese

  • 1/2 C sour cream

  • 1 teaspoon garlic powder (not granulated, if you can get actual powder)

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • 3 cups of finely grated cheese, reserving one cup (note, we used all sharp cheddar, but mix it up with the cheeses your family enjoys)

  • 6 strips of crispy bacon, chopped. Reserve about 1/2 for the end

  • 1 C chopped green onions, reserving about 1/3 cup of the green tops alternatively, use 3 T fresh chives, reserving 1 T for the end

Let's get started!

Steam cauliflower until fork tender, about 10 minutes. While the cauliflower is steaming, get a large bowl and combine the cream cheese, sour cream, spices, and 2 C of the shredded cheese. I used a fork to combine. Drain the cauliflower in a colander, then fold it into the cheese. Add about 1/2 of the bacon and all of the white parts of the green onions. Be sure to save about 1/3 C of the green onion tops. Place the cauliflower mixture into your pre-heated casserole dish. Bake, uncovered, for about 20 minutes until heated through and bubbly. Remove the pan from the oven and sprinkle the remaining cheese and bacon on top. Return to oven and bake another 5 minutes or so until cheese melts. Remove from oven again and sprinkle the top with the remaining green onions or fresh chive.

You are going to LOVE, LOVE, LOVE this recipe! I would suggest adding a little broccoli to the cauliflower for color. YUM!
